This October, Francesco Mazzei is off on an adventure! Along with fellow chef Tom Brown, courtesy of Croatia Tourism (Croatian National Tourist Board) and with Great British Chefs, he will be travelling to Croatia, to discover the hospitality, food, produce and culture.
Francesco and Tom’s travels will take them to the croatian capital of Zagreb, to meet with local suppliers as well as out to the Kvarner and Istria regions. The focus will be on discovering traditional produce and ingredients such as truffle, olive oil, Scampi and the variety of seafood Croatia has to offer. Following the trip Francesco will be developing a recipe inspired by the trip, a twist on a Croatian classic using the local ingredients.
